What can you do with leftover chicken karaage from Don Don Donki?
You could always put them in the fridge, re-heat and snack on them another day. Or… you could make an easy and hearty dinner salad by adding just a few more things.
Ingredients
Here’s what you need:
- 1 avocado, preferably Shepard for a rich and creamy texture
- 2 oranges
- 3 hard-boiled eggs
- 4 chicken karaage, preferably from Don Don Donki
- A handful of corn kernels
- Some Japanese mayo or Greek yoghurt
- Some Pepper and Shichimi Togarashi
Instructions
- Place eggs in a pot and cover with water, boil for about 6-7 mins using medium heat
- Peel the eggs and mash them with a spoon or fork in a big bowl
- Cut the chicken into bite-size pieces and heat up in an oven or airfryer. When they’re done, throw them into the same bowl as the eggs.
- Peel the oranges, cut into bite-size pieces and throw into bowl.
- Scoop out the avocado flesh, cut into bite-size pieces and throw into bowl.
- Rinse and drain corn thoroughly and (you guessed it!) throw into bowl. Easy, isn’t it?
- Add mayo or yoghurt, about 1-2 tablespoons
- Add pepper or shichimi togarashi, according to taste
- Mix well and enjoy
Even though there’s deep-fried chicken involved, you’re still technically having a “salad”. Which transforms it into health food.
